What I Ate Wednesday {25.6.14}

How are you doing today? I hope you've had a good week so far. I'm super excited as it's my, ahem 21st (?) birthday tomorrow.  I've got an amazing present coming in the post tomorrow and I sooo can't wait.  But more about that later.

It's a #WIAW today so let's crack on with it.
 

Breakfast



Breakfast was something completely different for me today, inspired by the lovely Linda over at I Am Linderella. A piece of wholemeal toast, topped with a mashed banana and boiled egg white. I was surprised by how much I liked this as it seemed like an odd combination to me but hey, I'm all up for trying new things. 

Lunch



What's this I hear you say? No avocado & tomato on toast? If you're a regular reader of my #WIAW you'll realise by now that this is a complete change for me to my normal eats. I'm making an effort to eat a wider variety if foods and I'm really enjoying it. 
This tasty lunch was a take on a Spanish Tortilla. I include loads of veg in mine though to make it better for me.  This one was fried onion, bell peppers, courgette, peas and spinach with slices of boiled potato.  I then mixed them with 2 whole eggs and 3 egg whites, splash of almond milk and cooked it like a thick omelette.  I tend to make a big one and it lasts me a couple of days, eaten warm or cold. 


I served it today with steamed veg - broccoli, peas, sweetcorn and spinach sprinkled with a few chilli flakes.

3pm Snack


 
I felt like my day was seriously lacking in fruit so decided to have a bowl of mixed berries and half an apple.

Tea



This little handful if nuts was my tea today. I was really quite full after my 3pm snack and was really busy so I just kinda forgot to eat tea which was a bit naughty of me.
